For inside-out rolls, simply place a sheet of plastic wrap on the bamboo mat before adding the rice and fillings, then roll and shape as usual. The plastic wrap helps to prevent the rice from sticking to the mat and allows for easy rolling of the inside-out sushi. Uramaki unlike other sushi, the rice is on the outside and the nori is on the inside. When making hand-rolled sushi, place a small amount of rice and fillings on one corner of a sheet of nori, then use the bamboo mat to roll it into a cone shape. The flexibility of the mat makes it easy to shape the hand-rolled sushi into a perfect cone, ready to be enjoyed as a convenient and portable sushi snack.
